Cafe Alamid – Coffee Beans From Cat Poo

Ok, it’s not really cat poo. Have you ever heard of an Alamid or what others call Palm Civet? Civets have a broadly cat-like general appearance, though the muzzle is extended and often pointed, rather like an otter or a mongoose. They range in length from about 17 to 28 in.  and in weight from about 3 to 10 lb.

Cafe Alamid is one of the most popular among coffee connoisseurs fetching $1,000/kilo. And with great pride, it is found, picked and roasted in the Philippines. Alamid is the local name of the Palm Civet. So, what makes Cafe Alamid extra ordinary? It begins with the Civet eating the ripest and finest berries it can find by smelling and stuff themselves with it. In the morning, beans are excreted since they cannot be digested. The Civet’s digestive tract is the machine that produces Cafe Alamid. It is through the stomach’s acid and enzymes that makes the structure of the bean. We can describe it as fermentation and this process separates cat coffee from the rest.

Once gathered, the beans are then carefully washed and left to dry in the wind and later to be packaged and mostly exported. Although the alamid coffee does have it’s charm and exquisite taste, like any other specialty coffee, it’s not everyones cup of tea. Some people might have trouble drinking it especially if they learned where the coffee comes from.

Personally, when I tried Cafe Alamid, there are hints of choco, cinnamon and roasted nuts. Cafe Alamid makes such a sublime cup. To appropriately describe the experience leaves me at a loss for words. For this pudding, the proof is in the sipping! Hmmm..It’s been awhile, I have to ask my wife to send some over here.
